How to Make Georgian Korean Yaksik

Introduction to Yaksik

Yaksik is a traditional Korean sweet rice cake that is not only delicious but also carries a significant cultural value. In this recipe, we will explore how to make a fusion version of Yaksik with a Georgian twist.

Ingredients:

  • 2 cups of short-grain rice
  • 1 cup of mixed dried fruits (such as apricots, raisins, and dates)
  • 1/2 cup of mixed nuts (such as walnuts and almonds)
  • 1/2 cup of honey
  • 1/4 cup of brown sugar
  • 1/4 cup of sesame seeds
  • 1/4 cup of pine nuts
  • 1/4 cup of dried cranberries
  • 1 teaspoon of cinnamon

Instructions:

  1. Wash the rice thoroughly and soak it in water for at least 1 hour.
  2. After soaking, steam the rice until it's fully cooked and slightly sticky.
  3. In a large mixing bowl, combine the cooked rice, dried fruits, nuts, honey, brown sugar, sesame seeds, pine nuts, dried cranberries, and cinnamon. Mix well.
  4. Transfer the mixture to a greased baking dish and press it down firmly.
  5. Bake the YAKSIK in a preheated oven at 180°C for 25-30 minutes or until it's golden brown.
  6. Let it cool before cutting it into squares or bars.
